This sweet potato toast recipe with smashed avocado and jammy eggs comes from the eggmazingly talented, Morgan Berrington @forkmylifechi. This toast will be sure to tick all of the healthy and savory breakfast boxes!
1 large sweet potato, cut into thick slices, lengthwise
Avocado oil spray
2 Farmers Hen House eggs
1/2 avocado, smashed and seasoned with salt and freshly ground black pepper
2 slices bacon, cooked and chopped
Salt and freshly ground black pepper
Optional: sprouts to garnish
Step 1
Preheat the oven to 400 degrees.
Step 2
Spray the potatoes slices with avocado oil spray and season with salt and freshly ground black pepper. Place on a parchment or foil lined baking sheet and bake for 10 minutes.
Step 3
After 10 minutes, flip the sweet potato slices and bake for another 5-10 minutes.
Step 4
While the sweet potatoes are cooking, bring a small pot of water to a boil. Once boiling, add the eggs and cook for 8 minutes (if you like the yolk jammy).
Step 5
Place egg in an ice bath to cool for a few minutes. Peel egg and set aside.
Step 6
Once sweet potatoes are cooked, time to assemble! Spread avocado on the sweet potatoes, top with jammy eggs and chopped bacon. Season with salt and freshly ground black pepper. Garnish sprouts and enjoy!
