Pizza crust (Pick these up at the grocery store. The recipe is for two 8 inch personal pizza crusts)
6 tbsp. of pesto sauce (store bought)
1 cup of shredded mozzarella
1/2 cup of shredded parmesan
1/2 cup of thinly sliced cherry or grape tomatoes
2 slices of prosciutto
8 basil leaves
Salt and pepper
Olive oil for drizzling
Step 1
Preheat oven to 425 degrees.
Step 2
On each crust, spread 3 tbsp of pesto evenly.
Step 3
Spread 1/2 cup of shredded mozzarella on each crust.
Step 4
Spread 1/4 cup cherry tomatoes and 1 slice of prosciutto on each crust.
Step 5
Sprinkle 1/4 cup of parmesan on each crust.
Step 6
Crack eggs and carefully put one egg in the middle of each crust.
Step 7
Place crusts on a baking sheet and bake for 10-15 minutes or until egg white becomes white. The yoke will still appear bright yellow and soft.
Step 8
Remove pizzas from oven and let cool.
Step 9
Place 4 basil leaves on each pizza and sprinkle with salt and pepper.
Step 10
Drizzle olive oil over the pizza, cut and enjoy!
