2 tortillas, charred or warm in a pan
1 tsp butter or oil
2 Farmer’s Hen House Eggs, beaten
1/2 cup cherry tomatoes, halved
Salsa of your choice
1 tbsp chopped cilantro
Chopped avocado
Hot sauce
Step 1
Heat your tortillas up to your liking. I love charring mine on the open flame of my stove top. You can also heat them in a nonstick pan or on a griddle. Set aside.
Step 2
Heat a small nonstick pan over medium heat.
Step 3
Once warm, add the butter or oil until the butter foams or the oil is warm.
Step 4
Add your two beaten eggs and season with salt and pepper.
Step 5
Slowly moving your spatula around the circumference of the pan, then slowly push in outside of the eggs towards the center of the pan to create large curds.
Step 6
Continue pushing the outside of the eggs towards the center until the scrambled eggs are cooked to your liking—about 2-3 minutes total.
Step 7
Assemble your tacos! Place your scrambled eggs into your warmed tortillas. Add cherry tomatoes, salsa, cilantro and avocado. Add hot sauce if you like!
