Looking to spice up your scramble? This healthy and delicious Cajun Egg Scramble from Morgan Berrington @forkmylifechi should more than suffice!
1 tsp of butter
1 andouille sausage sliced
1 scallion (reserve some sliced green tops for garnish)
¼ cup diced red pepper
2 Farmers Hen House Eggs
Salt and pepper
A few pinches of blackening seasoning
Step 1
In a small non-stick pan, add butter and turn the heat to medium.
Step 2
Add the andouille sausage and cook for 2-3 minutes until warm and crisped on the edges.
Step 3
Add the scallions and red pepper and sauté for 3-4 minutes until softened.
Step 4
Beat your two eggs together in a small bowl and add your eggs to the nonstick pan. Season with salt, pepper and blackening seasoning.
Step 5
Turn the heat down to low and move the outside eggs in towards the center to create nice, fluffy scrambled eggs.
Step 6
Once cooked to your liking, sprinkle with extra green scallions on top.
