Tortilla Egg Wrap (Keto recipe)

This tortilla egg wrap featuring our pasture-raised eggs (although any Farmers Hen House egg will do) can be a canvas for any of your favorite ingredients.  We used Mediterranean inspired ingredients with prosciutto, basil, tomatoes, red onion and goat cheese.  Let us know what you use!

Ingredients

1 large tortilla

1 Farmer’s hen house egg

10 oz shredded white cheddar cheese

2 oz goat cheese

1 cup of leafy greens

1/2 cup of basil leaves

10 thin slices of red onion

1 cup of cherry tomatoes sliced

2 pieces of prosciutto or ham

Directions

Step 1

In a pan on medium heat, melt 1 tbsp butter.

Step 2

Add onions and cook until softened. Remove and set aside.

Step 3

Wet tortilla with water and place in dry non-stick skillet with no heat.

Step 4

In a bowl, whisk Farmer’s Hen House egg.

Step 5

Pour 3/4 of the egg into the tortilla saving the rest for later.

Step 6

Spread egg around the tortilla.

Step 7

Add 3/4 of the cheddar cheese and spread evenly.

Step 8

Turn heat on medium and cover. Cook until cheese is melted.

Step 9

Once cheese is melted, carefully flip the tortilla in the pan.

Step 10

Spread the remaining egg on the tortilla.

Step 11

Spread the remaining cheddar cheese on the tortilla.

Step 12

Add greens, tomatoes, basil, onions, prosciutto and goat cheese to the center of the tortilla.

Step 13

Fold the tortilla like a burrito. Flip and press down to seal.

Step 14

Remove from heat and enjoy!
